Grass Peas

Cicerchie – grasse peas – are a typical legume from central Italy, with a characteristic flattened and rectangular shape. Cicerchie are grown and selected in Umbria and are the smallest variety. They have a pleasant, delicate flavour, similar to chickpeas and fava beans. When it comes to cooking, they go well with sage and tomato to prepare traditional soups, sauces and appetizers.
