Cave Beans

The main (and sometimes only) food of Umbrian peasant families until the 1950s, today Cave beans have become an absolute rarity, uniquely valuable and difficult to find. They are cultivated in a narrow strip of land (100 ha) in the hamlet of Cave (near the city of Foligno, Umbria region), bordering the right bank of the Topino river. Due to its limited production, it is enjoyed by a small number of connoisseurs, who are only able to buy it in small quantities. Its very thin skin makes it an easy-to-cook, pleasant bean with great versatility for the preparation of dishes such as soups, pastas and side dishes. It requires soaking.
