Pearled spelt is like hulled spelt, stripped of its skin, and therefore the flavour is less strong and can be cooked much faster. In the kitchen, it adapts well to all seasons: in summer, it can be cooked in salads, combined with fresh ingredients rich in vitamins, such as grilled vegetables, green leaf salads, spinach, etc. In winter, on the other hand, it can be combined with legumes, pasta and/or rice, or with mushrooms to prepare a warm soup to be served with crispy croutons, to warm you up and increase the calories. Moreover, spelt is rich in magnesium. Pearl spelt does not need to be soaked and cooks in 20 minutes.
