It is cultivated in the valleys and plateaus of the Umbrian Apennine ridge thanks to an association of farmers who created the association of “Zafferano di Cascia”. Following a specification similar to those used for PGI products (Protected Geographical Indication), the farmers produce, package and sell the stigmas of this flower, which, thanks to the absence of contaminants and the type of cultivation, is considered extremely pure. The spice is used by soaking the stigmas in lukewarm water. Pour the infusion you obtained directly into the seasoning when it is almost cooked.
